This delicate wild ale captures the essence of Ontario peaches, delivering a vivid sensory profile defined by vibrant stone fruit and rustic complexity. Aged in cider barrels, it presents an aromatic bouquet of fresh peach skin, crisp apple, and a whisper of wild Brettanomyces funk, evoking sun-dried hay and earthy undertones. The palate is exceptionally dry and refreshing, where the lush sweetness of the fruit is balanced by a subtle, bright acidity and a nuanced woody structure from the oak. Effervescent and crisp, it concludes with a clean, lingering fruit essence and a sophisticated, wild-fermented character.
Appearance. Pours a hazy pale gold to light amber (4–7 SRM) with a fine-beaded white head that dissipates to a thin, persistent ring; moderate lacing is present.
Aroma. High intensity of fresh Ontario peaches dominates, accompanied by secondary notes of tart cider apples and a rustic Brettanomyces character of wet hay, leather, and light barnyard funk.
Taste. Initial impression is of juicy, ripe stone fruit. The mid-palate reveals a delicate lactic tartness and a subtle tannic structure from cider barrel aging. Hop bitterness is very low, allowing the dry, crisp finish and funky, earthy fermentation character to linger cleanly.
Mouthfeel. Medium-light body with high, effervescent carbonation. Very low astringency from the peach skins and oak barrels; negligible alcohol warmth.
