Post It is a refreshing take on the modern American IPA, specifically leaning into the West Coast style with a stripped-back malt profile. The aromatic intensity is driven by a classic yet vibrant blend of Chinook, NZ Cascade, and Centennial hops. Expect an upfront burst of bright citrus zest and delicate floral notes, followed by the lush, fleshy sweetness of stone fruits. By minimizing the malt presence, the beer achieves a crisp, lean structure that emphasizes hop clarity. It finishes with a clean, gentle bitterness that invites another sip, perfectly balancing its moderate strength with a remarkably light-footed and thirst-quenching character.

Appearance. Pale gold (6 SRM). Brilliant clarity with a medium-sized, persistent white head that leaves fine lacing on the glass.

Aroma. High intensity hop aroma featuring prominent grapefruit and lemon zest from Centennial and NZ Cascade, backed by a light resinous pine from Chinook. Soft floral undertones and a hint of apricot stone fruit. Malt is very low, presenting as a clean, neutral graininess. Fermentation is exceptionally clean with no perceptible esters.

Taste. A hop-forward initial impression dominated by citrus peel and stone fruit flavors. The NZ Cascade provides a juicy fruitiness while Centennial adds a classic floral-citrus layer. Very low, cracker-like malt flavor supports the hops without adding sweetness. Moderate bitterness is present but smooth and non-lingering. The finish is dry and crisp, leaving a refreshing aftertaste of citrus oils and light pine.

Mouthfeel. Medium-light body with a crisp, smooth texture. Moderate to high carbonation enhances the refreshing quality. Very light, well-integrated alcohol warmth is present. No astringency.

Sensory Profile.
