Appearance. 3–4 SRM. Pale yellow with a persistent haze. Pours with a moderate white head of tight bubbles showing good retention and light lacing; highly effervescent.
Aroma. High intensity. Bright, tropical passion fruit dominates, complemented by the delicate, apricot-like and honeyed floral notes of osmanthus flower. Clean lactic acidity provides a sharp backbone, supported by light bready wheat malt and a faint, mineral-rich sea spray scent.
Taste. Immediate tart passion fruit and clean lactic sourness. The wheat malt provides a soft, doughy foundation. Osmanthus flower adds subtle stone-fruit complexity. Saint-Laurent salt provides a savory, mineral counterpoint that enhances the fruit flavors without being overtly salty. Very low bitterness; the finish is bone-dry and refreshingly acidic with a lingering tropical tang.
Mouthfeel. Medium-light body with high, effervescent carbonation. The salt creates a mouthwatering, tingling sensation on the tongue. Refreshing and crisp with no alcohol warmth and zero astringency.
