Jonquille is a vibrant New England IPA that delivers a saturated, juicy hop experience. The combination of Citra in both Cryo and T90 formats alongside Idaho 7 CGX creates a lush sensory profile defined by bright tropical citrus and ripe peach. The experimental HBC-1019 adds a distinct, succulent layer of papaya, enhancing the beer's exotic character. It pours with a luminous, opaque glow and a stable, rocky head. The palate is dominated by soft fruit flavors, supported by a gentle, bready malt backbone and a smooth, low-bitterness finish that emphasizes pure hop saturation over sharp edges.
Appearance. Straw to light gold (4-6 SRM) with a significant, opaque haze and a luminous glow. Features a dense, meringue-like white head with excellent retention and thick lacing.
Aroma. High intensity of tropical fruit, specifically papaya and peach, blended with zesty citrus. Clean, neutral, grainy malt sits in the background. Fermentation is clean with supportive fruity esters and no hop-derived grassiness.
Taste. High fruity hop flavor featuring papaya, peach, and tropical citrus. Malt flavor is low to medium-low, presenting as neutral grain or soft bread. Perceived bitterness is low to medium-low, masking its IBU count with a soft, pillowy finish. The aftertaste is clean and fruit-forward without harshness.
Mouthfeel. Medium-full body with a soft, smooth, and slightly creamy texture. Carbonation is moderate. Alcohol warmth is light and well-integrated. No astringency or raw starch texture.
