This complex Belgian Single, crafted as a wild table beer, belies its 3.5% ABV with layers of barrel-aged depth and rustic character. Inoculated with Nano Cinco and Mellön house cultures, it offers a vibrant interplay between crunchy grain and assertive farmy funk. The French Mistral hops introduce bright citrus accents that meld with the vinous, spirituous influence of eight months in Armagnac barrels. Expect a bone-dry, refreshing profile where the initial bready malt is swiftly overtaken by a sharp, wild acidity and spicy yeast phenols, resulting in a sophisticated, sessionable ale with a lingering, sophisticated finish.

Appearance. Pale straw to light gold in color with a slight haze from wild yeast cultures. It features a dense, billowy white head with excellent persistence and intricate lacing.

Aroma. High intensity with a complex bouquet of earthy funk, leathery brettanomyces, and farmhouse phenols. Bright citrus notes from Mistral hops mingle with white grape and a distinct spirituous character from Armagnac barrels. Underneath, a soft, crackery malt base provides a subtle honeyed backdrop, though the profile is dominated by spicy pepper and floral hop aromatics.

Taste. An initial impression of honeyed biscuit and bready malt is quickly followed by a sharp, clean acidity. Mid-palate, the Mistral hops deliver lemon and grapefruit zest, while the Armagnac aging adds layers of dried fruit and toasted oak. The finish is bone-dry and crisp, featuring a moderate hop bitterness and a lingering aftertaste of spicy phenols and barnyard funk.

Mouthfeel. Light-bodied and exceptionally effervescent, providing a prickly, refreshing carbonation. Despite the barrel aging, there is no perceptible alcohol warmth, though the acidity provides a sharp, mouth-watering quality without astringency.
