This New England Pale Ale is a masterclass in biotransformation, utilizing thiolized yeast to unlock vibrant tropical and vinous notes. The collaboration features NZ Cascade mash-hopping and a trio of Nelson Sauvin, NZ Cascade, and Hallertau Blanc, resulting in an aromatic explosion. Distinctive additions of Sauvignon Blanc skin powder and Riesling must amplify the sensory experience, offering intense aromas of crushed gooseberry, white currant, and bright lime. The palate is a balanced dance of citrus and white wine complexity, supported by a soft malt backbone that remains refreshingly drinkable with a modern, thiol-forward profile.

Appearance. SRM 5-7. Pale straw to light golden color with a characteristic New England haze. Topped by a moderately large, creamy white head with excellent retention and delicate lacing.

Aroma. High intensity with a striking bouquet of tropical fruit and vinous esters. Prominent notes of passion fruit, gooseberry, and grapefruit pith are complemented by the elegant, floral scent of Riesling and the mineral, grassy edge of Sauvignon Blanc. Low, clean grainy malt provides a subtle foundation.

Taste. The initial impression is a burst of tropical citrus and white grape. Layers of Hallertau Blanc and Nelson Sauvin contribute sophisticated flavors of lime, elderflower, and stone fruit. Bitterness is moderate and clean, balancing the slight sweetness of the grape must. The finish is crisp and dry with a lingering note of citrus zest and cold-pressed lime.

Mouthfeel. Medium body with a soft, slightly creamy texture. Moderate carbonation provides a refreshing lift without any harshness. Alcohol warmth is negligible, ensuring high drinkability and a smooth, non-astringent finish.
