This elegant Brett Beer presents a complex harmony of rustic wild fermentation and botanical grace. Barrel aging imparts a subtle woody structure that frames a vibrant bouquet of elderflowers. The infusion of whole leaf hops provides an earthy, floral depth that complements the characteristic Brettanomyces esters of stone fruit and pineapple. On the palate, the blend of wild ales offers a crisp, dry profile with a delicate, non-lactic acidity. It is a nuanced assemblage where the floral elderflower notes intertwine with wild funk and a faint tannic grip from the oak, finishing exceptionally clean and refreshing.
Appearance. Pours a light gold to pale amber (SRM 4-6) with a slight, natural haze. The bright white head shows moderate retention and leaves fine lacing on the glass.
Aroma. High intensity featuring floral elderflower and perfume-like whole leaf hops. Brettanomyces provides layers of ripe apricot, pineapple, and a light farmhouse funk reminiscent of wet hay. Faint notes of toasted oak and vanilla emerge from the barrel aging over a low, crackery malt background.
Taste. The initial impression is bright and floral, with elderflower providing a unique herbal character. High attenuation leads to a bone-dry palate with notes of tart peach, citrus peel, and a mild wood-derived tannin. Hop bitterness is low but firm enough to provide an earthy, leafy snap. The finish is crisp and exceptionally clean with a lingering spicy aftertaste.
Mouthfeel. Medium-light body with a lean, highly attenuated texture. Carbonation is moderate to high, creating a lively and spritzy mouthfeel. Very low alcohol warmth and minimal astringency despite the barrel contact.
