This Imperial Stout presents an indulgent sensory experience defined by a massive infusion of toasted Sri Lankan coconut. The base beer, fermented with a classic English yeast, provides a deep backbone of dark chocolate and espresso-like roastiness. The aroma is dominated by explosive coconut, supported by subtle plum and fig esters typical of the yeast profile. On the palate, a velvety, luscious texture carries flavors of bittersweet cocoa and rich, toasted nuttiness. A well-integrated alcohol warmth emerges in the finish, complementing the lingering creamy sweetness and firm but smooth bitterness, creating a harmonious and complex dessert-like character.
Appearance. Opaque jet black (40 SRM) with a dense, persistent deep tan head that leaves thick lacing. High viscosity is apparent in the glass, with visible legs forming upon swirling.
Aroma. High intensity aroma featuring a blend of prominent toasted coconut and rich dark chocolate. Secondary notes of black coffee, charred grain, and subtle dark fruit esters like raisins and prunes from the English yeast. A clean, smooth alcohol presence is noticeable.
Taste. Initial impression is of intense toasted coconut and creamy vanilla, quickly followed by layers of bittersweet chocolate and roasted malt. Moderate hop bitterness and roasted grain astringency provide balance. The English yeast contributes light plum-like esters. The finish is long and satisfyingly warm with a lingering coconut and cocoa aftertaste.
Mouthfeel. Full to very full-bodied with a velvety, chewy, and luscious texture. Carbonation is moderate. A gentle, smooth alcohol warmth is present throughout, enhancing the creamy feel without being sharp.
