Austral presents a rustic synergy of spontaneous cider and wild barrel-aged Saisons. This Brett Beer opens with a vibrant, farmhouse cider profile, defined by sharp orchard fruit and leather-like Brettanomyces funk. The addition of Les ruchers LeCam honey for bottle conditioning ensures a lively, spritzy effervescence that carries aromatic Saison notes of clove and white pepper across the palate. Barrel aging introduces a structured woodiness and subtle tannins, balancing the pronounced acidity. The result is a bone-dry, complex hybrid that leans into its wild, earthy character while maintaining a crisp, refreshing, and distinctly vinous finish.

Appearance. Luminous gold with a slight hazy shimmer (SRM 4-6). Features a persistent, frothy white head with excellent lacing, driven by high carbonation and honey-conditioned bottle fermentation.

Aroma. High intensity. A complex bouquet of funky barnyard, wet hay, and earthy Brettanomyces is layered over tart green apple and pear from the spontaneous cider. Subtle floral honey notes and spicy Saison phenols mingle with soft, toasted oak.

Taste. Initial sharp, clean acidity followed by rustic farmhouse cider flavors. The mid-palate reveals dry malt and spicy peppercorn esters. Bitterness is low, allowing the sourness and Brett funk to lead. Finishes remarkably dry with a lingering woody, wild character and tart orchard fruit.

Mouthfeel. Light-bodied and lean due to high attenuation. High carbonation provides a prickly, refreshing scrub on the tongue. Minimal alcohol warmth; slight astringency from barrel tannins enhances the bone-dry, crisp mouthfeel.
