Wapentake is a refined Ordinary Bitter that bridges traditional British structure with bright American hop accents. Utilizing a vibrant combination of Cascade and American Chinook hops, this session ale presents a light, citrusy profile characterized by grapefruit zest and pine needles. The Yorkshire heritage is expressed through a clean, bready malt backbone and a hint of fruity esters. Appearance. Pale amber to light copper color (8-12 SRM) with brilliant clarity. Features a low to moderate off-white head with fair retention and light lacing.
Aroma. Moderate intensity featuring prominent citrus notes of grapefruit from Cascade hops and a light resinous pine from American Chinook. Supporting malt aromas of fresh bread and biscuit are present, alongside a mild fruity ester profile. No diacetyl or DMS is perceived.
Taste. Initial impression of crisp bitterness followed by low to medium bready and biscuity malt flavors. Hop flavors are moderate, showcasing earthy spice and citrus zest. Bitterness is medium-high and leads the balance, finishing dry and clean with a lingering light hop aftertaste. Fermentation is clean with only subtle fruity esters.
