This Baltic Porter presents an opulent sensory journey, elevated by ten months of maturation in Pedro Ximenes sherry and Jamaican rum casks. A foundational rich maltiness of dark chocolate, molasses, and toasted nuts is layered with the luxurious influence of the barrels. The Pedro Ximenes contributes deep notes of sun-dried raisins, figs, and a vinous complexity, while the rum casks infuse subtle hints of spice and caramelized sugar. Despite its strength, the beer maintains the characteristic smoothness of a bottom-fermented porter, offering a clean finish where lingering notes of espresso and dark fruit converge in a sophisticated, warming embrace.
Appearance. Opaque dark brown with deep reddish-copper highlights at the edges. Features a thick, persistent tan-colored head with excellent lacing.
Aroma. High intensity with rich malt notes of dark chocolate, molasses, and licorice. Complex fruit esters of raisins, prunes, and figs from the Pedro Ximenes barrels are complemented by a vinous quality and a subtle hint of Jamaican rum spice. Smooth, warming alcohol presence without sharpness.
Taste. Initial malt sweetness leads into a complex blend of toffee, molasses, and nutty chocolate, balanced by a smooth, Schwarzbier-like roasted character that avoids burnt notes. The barrel influence adds layers of raisin and vinous sweetness, while the finish is elegantly dryish with lingering notes of dark fruit, espresso, and licorice. Medium-low bitterness.
Mouthfeel. Full-bodied and exceptionally smooth. Medium-high carbonation from bottle conditioning provides a mouth-filling texture without feeling heavy. Noticeable but well-integrated alcohol warmth from the 9% ABV and barrel aging.

My jsme jej uvařili v listopadu 2021 a přesunuli do dřevěných sudů po sherry Pedro Ximenes a jamajském rumu a nechali v nich 10 měsíců zrát. V září 2022 jsme pivo stočili do lahví, přidali trošku kvasnic a cukru a nechali ještě 2 měsíců dozrávat v lahvích. Výsledkem jsou 2 speciální edice každá po 600 ks lahví.
Baltic Porter 20% is a strong black bottom-fermented beer with 9.0% alcohol. We brewed it in November 2021 and moved it to Pedro Ximenes sherry and Jamaican rum wooden casks and let it age for 10 months. In September 2022, we bottled the beer, added a little yeast and sugar and left it to mature in the bottles for another 2 months.
