This combination yields a sensory profile defined by resinous pine and citrus hop notes layered over peppery phenols and subtle fruity esters. The appearance is a deep, near-opaque dark brown with a resilient tan head. On the palate, restrained notes of chocolate and toasted malt provide a smooth foundation for a firm hop bitterness, while the yeast contributes a spicy, dry finish. It is a well-attenuated, hop-forward ale with a sophisticated, multi-dimensional character.
Appearance. Deep dark brown to black (SRM 30-40). Persistent, moderate tan head with good lacing. Clear, though the depth of color makes it appear nearly opaque.
Aroma. Moderate to high intensity hop aroma featuring resinous and citrusy characters. Distinct spicy phenols like pepper and clove are present alongside light fruity esters from the T58 yeast. Low background notes of toasted malt and unsweetened cocoa.
Taste. Initial impression of hop-derived citrus and pine followed by a spicy, peppery yeast bite. Malt flavors are supportive, offering light chocolate and coffee without burnt or ashy harshness. Bitterness is firm and medium-high, leading to a dry, crisp finish with a lingering spicy-hop aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate to high, enhancing the perceived dryness and the spicy yeast character. Alcohol warmth is very low and well-integrated.
