This Blonde Ale offers a unique Mediterranean twist on a classic craft style by incorporating authentic sugar cane juice from the Axarquía region. On the nose, it presents a delicate balance of grainy, bready malts and a distinctively sweet, honey-like aroma reminiscent of raw sugar and sun-warmed fields. The palate is defined by a soft, rounded maltiness and the gentle, natural sweetness of the cane juice, which provides a smooth, approachable character without becoming cloying. Appearance. Deep yellow to pale gold (4-5 SRM) with brilliant clarity. It supports a low to medium white head with fair retention and light lacing.
Aroma. Moderate intensity featuring a clean, grainy malt base with hints of fresh bread. A prominent but refined sweetness emerges, carrying notes of raw sugar cane and light honey. Very low floral hop character and subtle fruity esters are present, though the fermentation remains largely clean.
Taste. Initial impression is softly malty and sweet, driven by the unique addition of sugar cane juice which imparts a rich, honeyed quality. Bread and cracker malt flavors form the backbone. Hop bitterness is low to medium-low, providing just enough structure to balance the sugar without adding significant flavor. The finish is medium-dry with a lingering, pleasant sweetness.
Mouthfeel. Medium-light body with moderate to high carbonation. It feels smooth and supple on the tongue, lacking any harshness or astringency. There is no perceptible alcohol warmth.
