This Belgian Dubbel presents a rich and complex profile that leans into the stronger end of the style. The sensory journey begins with a deep, malty foundation characterized by layers of caramel and toasted notes. Prominent fermentation esters contribute evocative aromas and flavors of raisins and dried red fruits, creating a sophisticated tapestry of sweetness and depth. Appearance. Dark copper to deep brown (SRM 17-20) with attractive reddish highlights. Topped with a large, dense, long-lasting creamy off-white head; generally clear with moderate lacing.

Aroma. Moderately strong intensity featuring rich malty aromas of caramelized sugar and toast. Pronounced fruity esters of raisins, plums, and dried red fruits are complemented by low peppery phenols and a soft, perfumy alcohol presence. Hops are absent.

Taste. Initial impression is malty-rich with flavors of caramel and toasted bread. The mid-palate reveals complex esters of dark dried fruits and light spicy phenols. Bitterness is medium-low, allowing the malt and fruit to lead the balance. The finish is moderately dry with a lingering aftertaste of dark sugar and yeast-driven spice.
