This 2017 vintage Eisbock offers a masterfully concentrated sensory experience, where the traditional ice-distilled lager base is enriched by the aromatic addition of vanilla. The profile is dominated by intense Maillard-driven maltiness, showcasing deep notes of toasted crust and dark caramel. The vanilla imparts a creamy, floral sweetness that rounds out the rich bready character and complements the matured dark fruit notes of plum and raisin. While the body is exceptionally full and viscous, the alcohol provides a smooth, elegant warmth rather than a sharp burn, finishing with a luxurious malt-forward dryness that reflects years of graceful aging.
Appearance. Deep dark brown with shimmering ruby highlights. Clarity is brilliant. The head is ivory-colored, thin, and dissipates quickly to a fine collar, leaving noticeable legs or 'tears' on the glass.
Aroma. High intensity aroma featuring rich toasted malt, bread crust, and dark caramel. Prominent natural vanilla adds a sweet, creamy layer. Dark fruit esters of raisin and plum are evident, with no hop aroma. The alcohol presence is clean and well-integrated.
Taste. Rich, sweet malt flavors lead with toasted bread, caramel, and a hint of cocoa. The vanilla provides a smooth, dessert-like complexity through the mid-palate. Malt-derived esters of dried fig and plum add depth. Bitterness is low, providing just enough balance against the malt. The finish is long and malty with a clean fermentation profile and an alcohol-derived dryness.
Mouthfeel. Very full-bodied with a thick, viscous, and syrupy texture. Carbonation is low. Significant, smooth alcohol warmth is present without being harsh or solventy. Extremely creamy and silk-like on the palate.
