This classic Gueuze presents a vibrant interplay of wild fermentation and refreshing acidity. It opens with an aromatic profile of horse blanket funk and earthy hay, softened by light notes of honeyed wheat and aged oak. The citrus-like tartness mimics rhubarb and lemon rind, driving a crisp, palate-cleansing experience. Despite its lower alcohol at 4.5%, it maintains a velvety texture and an effervescent, mousse-like presence. A delicate balance of lactic sourness and complex fruit esters defines this Gueuze, finishing bone-dry with a lingering, funky aftertaste that reflects the traditional blending of young and aged Lambics.
Appearance. Golden color (5-6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and persistent lacing; highly effervescent.
Aroma. High intensity with a complex, balanced funkiness showing notes of barnyard, hay, and light leather. Moderate lactic sourness is accented by citrus rind and pome fruit esters. Supportive malt presents as low bready and honey-like wheat; no hop aroma is present.
Taste. Initial impression is sharply sour and funky, mirroring the aroma with earthy and leathery notes. Low grainy malt flavor is quickly overtaken by a moderate lactic tartness and citrus fruit character. Bitterness is negligible, with acidity providing the primary balance. Finishes bone-dry and crisp with a tart, lingering funky aftertaste.
Mouthfeel. Medium-light body with a smooth, velvety texture. High, sparkling carbonation provides a prickly sensation. Notable puckering tartness is present without being harshly astringent; very low alcohol warmth.
