This American IPA presents a striking sensory profile that captures the bold, transformative spirit of a Navarrese akelarre. It opens with an intense hop-forward character, leaning heavily into classic American hop notes of grapefruit zest, resinous pine, and a hint of tropical fruit. The 5.2% ABV allows for a more drinkable, medium-light body that highlights a clean, grainy malt foundation without becoming heavy. The fermentation remains neutral, providing a transparent window for the hop bitterness to shine. The experience concludes with a decidedly dry finish and a lingering, crisp bitterness that emphasizes its refreshing and powerful character.
Appearance. Medium gold to light amber color with bright clarity; a slight haze is acceptable. Features a medium-sized, off-white head with good persistence and light lacing.
Aroma. High intensity hop aroma with prominent citrus, resin, and floral notes. Very low, clean, grainy-sweet maltiness supports the hops. Fermentation is clean with no significant esters.
Taste. Vibrant hop flavors of citrus peel and pine resin are dominant. A low, crackery malt presence provides background balance. Bitterness is firm and clean, leading to a dry, crisp finish with a lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth, soft texture. Carbonation is moderate-high, offering a lively mouthfeel without being harsh. Alcohol warmth is very low and well-integrated.
