This bold Belgian Golden Strong Ale, known as La Bèstia, balances high attenuation with the profound influence of wood. The base beer presents a dry, fruity profile driven by top-fermenting yeast, which is then transformed through aging in new American-French oak barrels. These barrels impart assertive spicy notes and a deep woody character that melds with the natural peppery phenols of the style. At 8% ABV, it offers a sophisticated interplay between bright pome fruit esters and the structured tannins of the oak. The result is a complex, effervescent, and spirited ale with a lingering, dry, and woody finish.
Appearance.Deep golden to light amber (6-9 SRM) with brilliant clarity. Features a massive, long-lasting, rocky white head that leaves characteristic Belgian lace as it slowly fades.
Aroma.High intensity with a complex bouquet of pear and apple esters alongside peppery phenols. The American-French oak provides distinct layers of spicy wood, light vanilla, and a hint of toasted grain over a nearly neutral malt base.
Taste.Initial flavors of crisp pome fruit and peppery alcohol carry through the palate. The new oak provides a prominent spicy wood character and subtle tannins. It features a medium-high bitterness that is accentuated by a highly attenuated, very dry finish and a lingering, clean aftertaste.
Mouthfeel.Light to medium body with very high, effervescent carbonation. Provides a smooth but noticeable alcohol warmth without being hot. Finishes with a slight woody structure but no harsh astringency.
