Moonwake Kölsch offers a refreshing, modern interpretation of the classic Kölsch style, bridging tradition and contemporary hop profile. This pale gold hybrid ale delivers a delicate balance of grainy-sweet malt and soft fruit esters. The sensory experience is defined by a sophisticated hop blend, pairing the traditional floral and spicy nuances of Hallertau Mittelfruh with the bright, stone-fruit and citrus lift of New Zealand’s Wai-Iti. On the palate, a soft, bready malt foundation supports a clean, moderate bitterness, leading to the crisp, dry, and highly attenuated finish characteristic of a cold-conditioned lagered ale. It is a vibrant, sessionable, and impeccably clean tribute to Cologne brewing.

Appearance. 3.5 to 5 SRM. Medium yellow to light gold with brilliant clarity. Features a delicate, bright white head with moderate retention and fine lacing.

Aroma. Moderate intensity with a low grainy-sweet, bready malt character. Sophisticated hop aroma blending herbal spice and floral notes from Hallertau Mittelfruh with subtle apricot and lime from Wai-Iti. Low fruity esters of pear and apple provide a pleasant, clean complexity.

Taste. Initial impression is soft and bready. Hop flavor is more expressive than traditional versions, showcasing herbal spice alongside bright New Zealand fruit notes. Medium-low bitterness (approx. 22 IBU) provides balance without lingering. Finishes very dry and crisp with a clean, neutral fermentation character and no residual sweetness.

Mouthfeel. Medium-light body with medium-high carbonation. Smooth and soft on the palate, yet well-attenuated and refreshing. Zero alcohol warmth and no astringency.
