This Wild Specialty Beer delivers a vibrant sensory experience inspired by New Zealand's terroir. The profile is defined by a sharp, refreshing acidity from the addition of kiwifruit, which harmonizes with the distinctively vinous character of Nelson Sauvin hops. These hops contribute intense notes of crushed gooseberry and white grape, reminiscent of a Marlborough Sauvignon Blanc. The malt bill is expertly crafted with Golden Naked Oats and Flaked Oats, providing a luxurious, silky, and creamy mouthfeel that serves as a necessary counterpoint to the beer's tartness. The result is a beautifully balanced, fruit-forward sour with a smooth grain backbone and a crisp, clean finish.

Appearance. Pours a hazy, pale straw to light gold (3–5 SRM). It develops a moderate, frothy white head with fair retention and light lacing, maintaining a slight persistent collar.

Aroma. High aromatic intensity featuring prominent fresh kiwi and tropical fruit. The Nelson Sauvin hops provide unmistakable layers of gooseberry and white wine. Low grainy malt sweetness is present, alongside a clean, lactic tartness and very subtle earthy funk from the wild fermentation.

Taste. An initial punch of tart kiwi and tangy gooseberry leads the palate. The hop flavor is moderate to high, reinforcing the vinous and tropical character. The malt provides a soft, nutty, and bready undertone from the Golden Naked Oats, though the balance remains decidedly acidic. Bitterness is very low, as the tartness provides the primary structural balance. The finish is dry and lingering with a refreshing fruit-skin snap.

Mouthfeel. Medium body with a notable creaminess and silky texture derived from the heavy use of Flaked Oats. Carbonation is moderate to high, creating a lively, prickly sensation on the tongue. Alcohol warmth is negligible, and there is a very low level of fruit-derived tannin.
