This Irish Stout presents a modern evolution of the classic dark ale, blending traditional roasted depths with vibrant New World hop character. Driven by a generous dry-hopping of Mosaic and Chinook, the sensory profile leads with assertive aromas of resinous pine and zestful grapefruit. These bright, citrusy notes provide a sharp counterpoint to a robust foundation of bittersweet chocolate, roasted coffee, and subtle treacle undertones. The interplay between the characteristically dry, roasted grain finish and the complex fruit nuances of the hops creates a sophisticated experience that honors the style's heritage while embracing contemporary aromatic intensity.

Appearance. Jet black and opaque with deep ruby highlights visible at the edges; topped with a thick, persistent, tan-colored head that leaves significant lacing.

Aroma. High intensity aromatic profile featuring dominant roasted coffee and dark chocolate notes, seamlessly integrated with the pungent resinous pine of Chinook and the tropical grapefruit and berry esters of Mosaic; low fermentation esters.

Taste. Initial impression of bittersweet chocolate and heavily roasted grain; the mid-palate introduces clear hop flavors of grapefruit zest and forest pine. The bitterness is firm and medium-high, balancing a slight treacle sweetness. It finishes quite dry with a lingering roasted coffee character and a clean, hop-driven snap.
