Moonwake

This Hazy IPA offers a lush, velvet-like experience, driven by the additions of flaked oats and lactose. The sensory profile is dominated by a saturated tropical bouquet from the combination of Azacca and Mosaic hops, showcasing vivid notes of overripe mango, pineapple, and citrus zest. The inclusion of oats provides a soft, pillowy texture that carries the juice-forward hop character across the palate with minimal bitterness. While the malt remains neutral and bready, the lactose provides a subtle, rounded sweetness that balances the vibrant hop oils, resulting in an exceptionally smooth, breakfast-inspired treat that emphasizes depth of aroma over sharpness.

Appearance. 3-6 SRM. Deep straw to light gold with a characteristic opaque haze and a healthy shine. Features a persistent, meringue-like white head with excellent retention and thick lacing.

Aroma. High intensity hop-forward aroma featuring heavy tropical fruit like mango and papaya, coupled with citrus notes from the Azacca and Mosaic. Background notes are lightly bready and doughy with a hint of creamy sweetness from the lactose; clean fermentation with subtle stone fruit esters.

Taste. Explosive initial flavors of pineapple, stone fruit, and tangerine. Low to moderate perceived bitterness is well-integrated, offset by a significant malt body. The grain bill provides a doughy, neutral backdrop, while the lactose lends an off-dry, smooth finish. The aftertaste is clean and juice-like without any hop harshness or astringency.

Mouthfeel. Medium-full body with a soft, creamy, and pillowy texture enhanced significantly by the oats. Moderate carbonation with no harshness and a very light, well-hidden alcohol warmth.
