Moonwake

This Munich Dunkel captures the spirit of the underworld with its deep, dark hue, yet remains surprisingly vibrant. Built on a foundation of rich, bready Munich malts, it delivers classic notes of toasted crust and a subtle hint of chocolate. Moonwake deviates from tradition by incorporating Solero hops, injecting a modern tropical fruit edge that lightens the profile. The result is a seamless fusion of continental tradition and contemporary flair, where the savory depth of toasted grains meets an unexpected citrus and stone fruit brightness. Smooth and highly drinkable, it balances malt richness with a clean, medium-dry finish.

Appearance. Deep mahogany to dark brown (approx. 24–28 SRM) with visible garnet highlights when held to the light. It features a creamy, persistent light tan head with good lacing and is generally clear.

Aroma. Moderate to high malt richness, reminiscent of toasted bread crusts, nuts, and a hint of chocolate. The Solero hops provide a moderate, modern hop character with notes of tropical fruit and citrus. The fermentation profile is clean with no esters or phenols.

Taste. Rich, bready malt flavors lead with notes of toasted grain and chocolate. The Solero hops provide a light tropical, fruit edge that adds a modern dimension to the flavor. Bitterness is medium-low, providing just enough balance against the malt. It finishes medium-dry and clean with a lingering toasted malt aftertaste.

Mouthfeel. Medium body with a soft, dextrinous mouthfeel that avoids being heavy or cloying. Carbonation is moderate. The beer is smooth with no alcohol warmth or astringency.
