Sion Corn is a refreshingly sessionable contemporary Christmas ale that reimagines holiday flavors within a light, approachable 4% ABV framework. This Experimental Beer delivers a festive sensory profile, leading with an inviting bouquet of seasonal spices reminiscent of cinnamon, nutmeg, and dried citrus peel. The palate is defined by a gentle, toasted malt core providing notes of biscuit and soft caramel, which balances the subtle spice additions without becoming cloying. Its clean fermentation profile and moderate carbonation ensure a crisp finish, offering a bright, drinkable alternative to traditionally heavy winter warmers while maintaining a distinctively celebratory character.
Appearance. Deep copper to amber (SRM 14-17) with brilliant clarity. Pours with a moderate, off-white creamy head that shows good retention and leaves light lacing on the glass.
Aroma. Moderate intensity featuring a festive spice blend of cinnamon, ginger, and orange zest. The malt character is medium-low, presenting bready and lightly toasted notes. Hop aroma is very low and floral, with clean fermentation and minimal fruity esters.
Taste. Initial malt impressions of toasted bread and light caramel are quickly joined by a balanced medley of holiday spices. Hop flavor is low, offering a faint earthy quality. Bitterness is mild (approximately 18-22 IBU), providing just enough structure to balance the malt sweetness. The finish is clean and off-dry with a short, spicy aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, refreshing sensation. Smooth texture with no astringency and no perceptible alcohol warmth.
