This Bourbon Barrel Aged Imperial Stout presents a profound sensory experience, defined by its extended time in wood. The aroma is a powerful convergence of dark-roasted coffee and bittersweet cacao, intertwined with the unmistakable influence of Bourbon barrels. Initial scents of vanilla and rich caramel meld with deep-seated oak and subtle dark fruit esters. On the palate, the 11% ABV provides a significant, smooth warmth that carries flavors of espresso, toasted malt, and creamy vanilla. The finish is long and complex, striking a balance between assertive hop bitterness and a lingering, luxurious sweetness from the barrel-tempered malt profile.
Appearance. Opaque jet black (40 SRM). A dense, deep tan head with moderate retention that leaves oily legs on the glass, characteristic of its high viscosity and alcohol content.
Aroma. High intensity; prominent aromas of charred oak and Bourbon-soaked vanilla. Secondary notes of dark chocolate, roasted coffee beans, and black licorice. Subtle dark fruit esters, reminiscent of raisins and prunes, appear as the beer warms.
Taste. Initial impression is rich and viscous. Dominant flavors of bittersweet cacao and espresso are rounded by barrel-derived caramel and vanilla. Firm hop bitterness provides structure against a backdrop of toasted malt. The finish is lingering and warm, featuring a harmonious blend of oak and dark malt.
Mouthfeel. Full-bodied and velvety with a thick, chewy texture. Carbonation is low to moderate. A significant, well-integrated alcohol warmth is present without being sharp or solventy.
