This elevated Gose presents a vibrant sensory marriage of stone fruit and savory herbs. A deep golden hue carries aromas of sun-ripened apricot and the peppery, aromatic lift of fresh basil. The higher alcohol content provides a more substantial body than a traditional version, supporting a complex profile where clean lactic tartness meets a subtle, mineral saltiness. Soft doughy wheat notes provide a foundation for the luscious apricot sweetness, while the basil adds a refreshing, slightly anise-like herbal counterpoint. It finishes crisp and mouthwatering, with the salt enhancing the fruit's brightness and the elevated strength adding a gentle, integrated warmth.
Appearance. Deep yellow to light gold (5–7 SRM). Moderate white head with tight bubbles and fair retention. Significant haze from wheat proteins and fruit additions.
Aroma. High intensity. Prominent jammy apricot and stone fruit esters are layered with a distinct, peppery, and slightly sweet herbal basil character. Moderate lactic sourness and a light sea-air saltiness. Low bready wheat malt; no hop aroma.
Taste. Initial sharp lactic acidity balanced by rich apricot pulp. The mid-palate features a complex interplay of savory basil and light doughy malt. Very low bitterness (approx. 10 IBU). Light saltiness provides a round, savory edge that enhances the fruit. Dry, acidic finish with lingering notes of apricot and herb.
Mouthfeel. Medium-full body, more substantial than a standard version. High carbonation with an effervescent, tingly quality. Noticeable but well-integrated alcohol warmth. Slightly creamy texture.
