The aromatic profile is dominated by the sharp, resinous pine of Simcoe, interwoven with the bright, citrusy orange and floral notes of Amarillo. On the palate, a clean, grainy malt backbone provides just enough support for the aggressive hop bitterness. Flavors of grapefruit zest and passion fruit emerge before yielding to a crisp, bone-dry finish. The fermentation is impeccably clean, allowing the interplay of classic Pacific Northwest hops to remain the focal point of this refreshing, assertive ale.
Appearance.Medium gold (7 SRM), brilliant clarity, with a medium-sized white head that shows excellent persistence and dense lacing.
Aroma.High intensity hop aroma featuring notes of pine resin, grapefruit pith, and floral orange. Supported by a low, clean, grainy malt sweetness. Fermentation profile is neutral with no discernible esters.
Taste.Leading with a punch of resinous pine and citrus zest, the hop flavor is high and complex. A low, toasted bread malt character provides a brief support before a firm, assertive bitterness takes over. The balance is decidedly hop-forward, finishing very dry with a lingering pithy aftertaste.
Mouthfeel.Medium-light body with a smooth, crisp texture. Moderate-high carbonation provides a refreshing bite. Very light, integrated alcohol warmth is present without any harshness or astringency.
