Under the Wave is an aromatically charged Double IPA that showcases an intricate hop profile. An assertive double dry-hopping regimen utilizing Talus, Galaxy, and Citra delivers a vibrant sensory experience of pink grapefruit, passionfruit, and tropical mango, underpinned by unique floral rose and herbal sage nuances. The palate is dominated by high hop intensity and a firm, clean bitterness that balances the 8.7% alcohol. A lean, supportive malt presence ensures a dry, crisp finish, while the fermentation remains neutral. This beer balances immense hop saturation with high drinkability, leaving a lingering, resinous trail of citrus and stone fruit.
Appearance. Deep gold to pale orange color with a slight, modern haze. Features a thick, creamy, off-white head with excellent persistence and lacing.
Aroma. Intense hop aroma featuring prominent notes of passionfruit, lime, and mango from Citra and Galaxy, complemented by complex floral, sage, and coconut notes from Talus. Malt is supportive and neutral with no caramel, while fermentation esters are minimal and clean.
