A vibrant Wild Specialty Beer that radiates a hazy, glowing pink hue from a generous addition of Mornington Peninsula strawberries. The sensory profile is led by an intense bouquet of fresh-picked berries intertwined with the rustic, earthy funk of house cultures and a soft, bready wheat malt foundation. On the palate, a sharp but well-integrated lactic acidity heightens the strawberry essence, while the barrel fermentation imparts a subtle woody structure and complexity. It finishes remarkably dry and crisp, with the fruit’s natural esters and strawberry seed notes lingering alongside a clean, tart snap. This is a bright, exceptionally drinkable expression of fruit and wild fermentation.

Appearance. Vibrant pink to rose-colored with a hazy, translucent clarity; pours with a fine-textured, light pink head that exhibits moderate to low retention, typical for the style.

Aroma. High intensity of fresh, ripe strawberries and wild berry esters; moderate funky, earthy, and slightly leathery aromatics from house cultures; clean lactic tartness; subtle bready wheat malt and a faint, neutral oak wood character.

Taste.
