This Imperial Stout offers an immersive sensory experience shaped by nearly twenty months in a ten-year-old Elijah Craig bourbon barrel. At 14.8% ABV, it presents an intense aromatic profile of scorched oak, rich vanilla, and toffee, layered over deep-roasted espresso and bittersweet chocolate. The palate is decadently full, showcasing the unadulterated harmony of dark specialty malts and premium spirit. Flavors of black cherry, leather, and caramelized sugar meld with a sophisticated bourbon character. Appearance. Opaque jet black (40+ SRM) with a thin, dark tan head that exhibits low retention. Significant viscosity is visible as slow-moving legs on the glass.
Aroma. High intensity with prominent bourbon, charred oak, and vanilla from the long maturation. This is backed by rich dark chocolate, roasted coffee, and deep esters of prune and raisin.
Taste. Initial impression of dense chocolate and espresso. The middle reveals Elijah Craig influence through notes of toasted oak, caramel, and spicy bourbon. Firm bitterness is well-hidden by the massive malt body. The finish is long and complex, highlighting lingering dark fruit and molasses.
