This Double IPA is a high-intensity sensory experience defined by a massive 22g/L dry-hop addition. A complex bouquet of Idaho 7 and Idaho 7 Cryo provides resinous pine and ripe tropical fruit, while Topaz contributes subtle notes of lychee and spice. The inclusion of Triumph hops adds layers of bright citrus and soft peach. Beneath the heavy hop saturation, a clean, neutral malt base ensures the focus remains on the lupulin profile. It finishes dry and assertive, balancing its 8% strength with a firm bitterness that cleanses the palate without being harsh.
Appearance. Deep gold to light copper (8-10 SRM). Features a moderate, persistent off-white head with good lacing. Clarity is mostly clear, though a light, hop-derived haze is acceptable and present.
Aroma. High intensity hop aroma featuring prominent notes of pineapple, mango, and stone fruit from Idaho 7. A resinous, dank undertone from Topaz is present alongside citrusy zest from Triumph. Malt is low and neutral, providing a cracker-like background. Fermentation is clean with a very light touch of smooth alcohol.
Taste. Strong, complex hop flavors dominated by tropical fruit and pine. The bitterness is firm and high but lacks harshness. Malt flavor is low and unobtrusive, serving as a soft support for the hops. It concludes with a medium-dry finish and a lingering hoppy aftertaste of citrus and resin.
Mouthfeel. Medium body with a smooth texture. Carbonation is moderate to medium-high. A light, well-integrated alcohol warmth is present, with no hop-derived astringency.
