This Belgian-inspired Witbier offers a contemporary aromatic twist on a traditional foundation. Built on a base of pilsner malt and a blend of rolled and malted wheat, it presents a signature hazy, pale glow. The classic additions of orange peel and coriander seed are heightened by delicate chamomile, providing a soft floral depth. A deliberate dry-hop of Hallertau Blanc introduces sophisticated layers of gooseberry, grapefruit, and elderflower, reminiscent of a crisp Sauvignon Blanc. Fermented with Bluestone’s Liege Ale yeast, the profile is exceptionally balanced, finishing with a smooth, refreshing lemongrass snap and an effervescent, clean mouthfeel.
Appearance. Very pale straw with a milky, whitish-yellow shine. The beer is very cloudy from a combination of starch haze and yeast. It supports a dense, white, moussy head with excellent retention and light lacing.
Aroma. Moderate intensity featuring bready pilsner malt and grainy wheat aromatics. Zesty, citrusy orange peel and perfumy-lemony coriander blend with herbal chamomile. Distinctive hop character from Hallertau Blanc adds elderflower, gooseberry, and lemongrass. Low yeast-derived floral esters.
Taste. Pleasant initial bready, grainy malt flavor followed by a moderate zesty orange citrus fruitiness. Subtle herbal-spicy flavors of coriander and chamomile are balanced by sophisticated hop notes of grapefruit and white wine. Bitterness is low and unobtrusive, supporting a refreshingly crisp and dry finish without any harsh aftertaste.
Mouthfeel. Medium-light body with a notable smoothness and light creaminess derived from the unmalted wheat. High carbonation creates an effervescent, prickly sensation. No alcohol warmth or astringency is present.
