Apiary Drip is a sophisticated Double IPA that marries intense hop saturation with a velvety, dessert-like structure. A base of barley, wheat, and oat malts, enriched with milk sugar, provides a lush foundation for hand-selected Strata, Simcoe, and Sabro hops. Strata drives vibrant passionfruit notes, while Simcoe adds layers of resinous pine and grapefruit. The unique Sabro and its cryo counterpart contribute distinctive coconut and tropical fruit nuances. Local honey integrates seamlessly, offering a floral nectar sweetness that balances the firm bitterness. The result is a creamy, full-bodied experience with a clean, warming finish that highlights the complex interaction of modern hops and honey.
Appearance. Deep gold to pale orange (SRM 7-9). Features a moderate-sized, persistent off-white head with dense lacing. Displays a slight haze consistent with the use of wheat, oats, and heavy dry-hopping.
Aroma. High intensity. Pronounced tropical fruit esters of passionfruit and mango, paired with distinctive coconut and stone fruit. Moderate resinous pine and citrus zest notes. Background malt character is creamy and grainy with a faint floral sweetness from the honey.
Taste. Initial impression is a burst of tropical and citrus hop flavors. A soft, bready malt presence from the wheat and oat malts provides support. Bitterness is moderately high but smooth, avoiding harshness. The addition of milk sugar and honey provides a balanced-sweet mid-palate that gives way to a medium-dry finish with lingering notes of grapefruit and floral nectar.
Mouthfeel. Medium-full body with a notable creaminess and smooth texture. Carbonation is moderate. A well-integrated, smooth alcohol warmth is present without being solventy. Low astringency.
