Modern Times Beer Telesto
Telesto is a vibrant Hazy IPA that showcases the tropical and citrus synergy of Simcoe and Amarillo hops. The pour is characteristically opaque with a luminous golden glow. On the nose, Simcoe provides deep passionfruit and earthy pine notes, while Amarillo contributes bright bursts of orange zest and grapefruit. A unique addition of rye lends a subtle, peppery spice that cuts through the soft, pillowy malt base, providing a sophisticated depth. The palate is a lush wave of stone fruit and citrus juice, supported by a medium-full body and a restrained, smooth bitterness that ensures a remarkably refreshing and satisfying finish.
Appearance. Straw to light amber (SRM 4-6) with a significant, opaque haze and a luminous shine. It features a dense, white, meringue-like head with excellent retention and thick lacing.
Aroma. High intensity hop-forward bouquet featuring Simcoe's distinct notes of passionfruit, pine, and berry, alongside Amarillo's bold orange and grapefruit citrus. A light, grainy malt backbone is present, complemented by a subtle spicy hint from the rye and neutral to lightly fruity fermentation esters.
Taste. Massive flavors of tropical fruit and citrus marmalade lead the profile. The Simcoe delivers complex layers of earth and fruit, while Amarillo reinforces the citrus-heavy theme. A low-to-medium hop bitterness is expertly balanced by a soft malt sweetness. The rye adds a faint, peppery complexity to the mid-palate, leading to a smooth, off-dry finish with a lingering fruity aftertaste.
Mouthfeel. Medium-full body with a characteristically soft, pillowy texture. Carbonation is moderate, enhancing the smoothness without being prickly. Very light alcohol warmth is well-integrated at 7% ABV, with no harshness or astringency.
