Phantom Twilight is an enchanting Wild Specialty Beer that marries the spiced lightness of a Witbier with the rustic, funky character of a rye Grisette. Poured into a glass, it reveals a delicate blush hue reminiscent of a fading sunset. The influence of second-use Montmorency and Balaton cherries is unmistakable, offering a layered, tart fruitiness that is beautifully integrated with the base beer’s wild fermentation. Aging in clay amphora contributes a distinctive dry minerality and a subtle earthy complexity, resulting in a palate that is both soothing and refreshingly crisp, finishing with a refined, lingering acidity and a bone-dry character.
Appearance. Pours a lovely blush color with hues of soft pink and orange (SRM 6-9). Head is off-white to pale pink with moderate retention, leaving a fine bead and light lacing. Clarity exhibits a slight haze consistent with the use of wheat and rye.
Aroma. High intensity with a complex blend of bright Montmorency and darker Balaton cherries. A distinct wild fermentation profile provides notes of hay, earthy funk, and a sharp lactic tartness. Subtle spicy rye and wheaty malt are present in the background, complemented by a dusty, stony mineral character from amphora aging.
Taste. Initial impression is sharply tart and refreshing. The flavor is dominated by layered cherry esters and a clean, puckering acidity. Malt presence is low, offering a hint of grainy wheat and a touch of rye spice. Fermentation character is moderately funky with Brettanomyces-driven complexity. The finish is bone dry and emphasizes a unique clay-like minerality and lingering tartness without any perceivable hop bitterness.
Mouthfeel. Medium-light body with moderate to high carbonation that provides a prickly, effervescent sensation. Alcohol warmth is very low and well-integrated. A light, pleasant astringency from the cherry skins enhances the overall dryness of the finish.
