Vaarmjød presents a sophisticated tapestry of wild honey and botanical complexity. The aroma leads with the resinous, pine-like snap of Juniper, followed closely by the deep, earthy, and slightly nutty undertones of hemp. On the palate, the sweetness of the honey provides a lush foundation, balancing the herbal astringency and spicy evergreen notes. As a Spice, Herb, or Vegetable Mead, it showcases a seamless integration of its unique botanicals against a warm 11% ABV backdrop. The finish is long and warming, leaving a lingering impression of forest floor and floral nectar, perfectly capturing the essence of a Nordic spring.
Appearance. Ranging from light to medium gold (5-8 SRM); brilliant clarity with a still to very lightly sparkling presentation. Legging is prominent on the glass due to high alcohol and sugar content.
Aroma. Moderate to high intensity. Pronounced floral honey aromatics are complemented by sharp, resinous Juniper notes reminiscent of gin. An underlying earthy, herbal, and slightly grassy scent from the hemp adds depth. Clean fermentation with no yeast-derived phenols or harsh fusel alcohol.
Taste. Initial impression of rich honey sweetness, quickly followed by the assertive, spicy, and piney flavors of Juniper. The hemp contributes an organic, nutty, and mildly bitter herbal layer that cuts through the honey's weight. Balanced toward the sweet side but with enough botanical character to prevent cloying. Finish is clean with a lingering resinous aftertaste.
Mouthfeel. Medium-full body with a smooth, velvety texture. Carbonation is very low to still. Noticeable but well-integrated alcohol warmth reflecting the 11% ABV. Minimal tannin-driven astringency from the botanical additions.
