This celebratory Sweet Mead showcases a decadent synergy between 100% Spanish chestnut honey and six months of bourbon barrel maturation. It pours with a rich, mahogany depth, leading with a high-intensity aroma of charred oak, deep caramel, and toasted walnuts. On the palate, the unique, slightly earthy profile of chestnut honey balances the intense residual sweetness, offering sophisticated layers of dark chocolate, vanilla bean, and a hint of coconut from the wood. The bourbon influence is prominent yet integrated, providing a velvet warmth that carries the nutty honey character through a long, luxurious finish. It is a bold, complex, and dessert-like sensory experience.

Appearance. Deep mahogany to dark amber (25–35 SRM); brilliant clarity; still with no foam or lacing, exhibiting heavy legs and high viscosity on the glass.

Aroma. High intensity; rich, earthy honey notes reminiscent of dark syrup, molasses, and toasted nuts; significant bourbon character with prominent vanilla, toasted oak, and a touch of marshmallow; clean fermentation with no fusel alcohols or hop presence.

Taste. Initial impression is very sweet and decadent; intense honey flavors of dark caramel and cocoa; mid-palate reveals nutty tannins from the chestnut honey and oak; moderate bourbon-barrel character contributes vanilla and spice; balance is toward honey sweetness but tempered by wood tannins; finish is long, warming, and lingering with a nutty aftertaste.
