Silbón presents a classic Irish Stout experience, defined by a deep, roasted core that evokes intense notes of freshly ground coffee and unsweetened cocoa. This jet-black ale emphasizes a dry, crisp finish characteristic of the style’s heritage. The malt profile is dominated by dark roasted grains, providing a firm backbone against a moderate bitterness that lingers into a clean, parching aftertaste. Subtle earthy hop notes and very light fruity esters add complexity without distracting from the primary roasted theme. Smooth and sessionable at 5% ABV, it balances significant dark grain intensity with a remarkably nimble, accessible drinkability.
Appearance. Jet black in color (SRM 35-40) with deep garnet highlights when held to the light. Features a thick, creamy, long-lasting tan head with excellent lacing. Completely opaque.
Aroma. Moderate coffee-like intensity dominates the nose, supported by secondary notes of dark chocolate and roasted grain. Low earthy hop aroma is present, alongside very faint, clean fermentation esters.
Taste. Initial impression is of moderate roasted grain and malt bitterness. Flavors of bittersweet chocolate and unsweetened coffee lead into a dry, parching finish. Hop bitterness is medium-high (approx 35 IBU) and well-integrated. The aftertaste is clean and lingering with a roasted character.
Mouthfeel. Medium body with a smooth, somewhat creamy texture. Carbonation is moderate. Displays a very light, pleasant roast-derived astringency but remains remarkably smooth without harshness. No significant alcohol warmth.
