PYGMY presents as a quintessential modern interpretation of a Belgian Single, functioning as a vibrant table beer despite its low ABV. The sensory profile is defined by a punchy synergy between traditional Belgian yeast esters and the contemporary hop duo of Citra and El Dorado. Expect an aromatic burst of tropical pineapple and bright grapefruit layered over peppery phenols and a lean, crackery malt base. The palate is exceptionally dry and refreshing, emphasizing the snappy bitterness and citrus zest of the hops, while maintaining the classic spicy-floral lift of a monastic ale. It is a lean, effervescent, and highly drinkable session ale.
Appearance. Pale straw to light gold (3 SRM). Hazy, departing from traditional clarity, with a moderate-sized, persistent, billowy white head that leaves characteristic lacing.
Aroma. Moderate to high intensity. Bright citrus notes of grapefruit and lime from Citra hops are joined by pineapple and stone fruit from El Dorado. These are integrated with spicy Belgian yeast phenols resembling white pepper. Low malt presence with subtle bready and crackery notes.
Taste. Initial impression is crisp and highly carbonated. Malt flavor is very light, showing soft honeyed biscuit and grainy tones. Hop flavors are forward, featuring tropical fruit and citrus peel. Bitterness is moderate but feels firm due to the extremely dry, highly attenuated finish. Aftertaste is clean with lingering spice and citrus zest.
