MIRAGE The September Issue

The September Issue is an elegant, oak-conditioned Wild Ale that marries the rustic character of a blended Saison with the delicate, floral essence of heirloom Mirabelle plums. Poured from a sophisticated mix of young and aged components, it offers a profile where subtle stone fruit sweetness meets the earthy, funk-forward influence of Brettanomyces. The Mirabelle plums, sourced from the Mirkovich homestead, provide a nuanced, honey-like fruitiness that weaves through notes of weathered wood and light farmhouse spice. This 5% ABV blend balances a gentle tartness with a lingering fruit finish, showcasing a dry, complex character that highlights the rare fruit without overshadowing its fragility.
Appearance. Deep gold to pale amber (SRM 5-7); moderate white head with fair retention and light lacing; slight haze consistent with fruit additions and Brettanomyces conditioning.
Aroma. High intensity with a complex blend of earthy funk, wet hay, and leather. Prominent floral stone fruit notes of Mirabelle plum and honey are layered over subtle toasted oak, vanilla, and a faint cracker-like malt base. No hop aroma.
Taste. Initial impression is a delicate balance of stone fruit and mild tartness. The Mirabelle plums offer a subtle, honeyed sweetness that persists against a bone-dry, barnyard-funk backbone. Oak conditioning provides a structured, woody middle. Bitterness is very low, allowing the fermentation acidity and fruit to lead into a long, dry, and floral finish.
Mouthfeel. Medium-light body with high carbonation providing a lively, effervescent prickle. Minimal alcohol warmth at 5% ABV. A slight drying tannin from the oak conditioning is present, but without harsh astringency.

*THE SEPTEMBER ISSUE* is a blend of young and aged saisons conditioned in oak with heirloom Mirabelle plums from the Mirkovich homestead on Bainbridge Island. Mirabelles are illegal to import or sell in the United States, but it’s legal to grow them–these trees likely began as cuttings planted by the Mirkovichs generations ago. And while I’ve never harvested/seen a more beautiful fruit, its subtle character and lingering sweetness made for a challenging blending day. It took juuust the right amount of tart/aged saison to balance the young/fruited saison base without overpowering it entirely. Super honored to have worked with this fruit, and very proud of the result.
