This barrel-cofermented Saison presents a sophisticated fusion of rustic farmhouse character and the aromatic intensity of Siegerrebe winegrapes. The sensory profile is elevated by the grape’s signature floral and muscat-like perfume, interwoven with the spicy, black pepper phenolics of the base yeast. On the palate, the vinous influence of the Siegerrebe grapes provides a delicate stone fruit and lychee character that is immediately countered by a bone-dry, effervescent finish. The single-barrel aging adds a subtle tannic structure and soft oak depth, balancing the high carbonation and lively, citrusy acidity typical of this strong farmhouse ale.
Appearance. Deep gold to light amber (approx. 7 SRM) with a slight hazy, unfiltered appearance. Topped by a dense, rocky, long-lasting ivory head that leaves persistent Belgian lace. Highly effervescent with visible carbonation streams.
Aroma. High intensity with a complex bouquet of floral musk, lychee, and honeyed grapes from the Siegerrebe. This is supported by moderate spicy yeast esters resembling black pepper and a hint of citrus zest. Low grainy malt sweetness and a soft, earthy hop presence linger in the background.
Taste. Initial impression is brightly vinous, featuring flavors of white grape, apricot, and a light honeyed malt spine. The mid-palate introduces firm peppery phenolics and a floral hop bitterness. Exceptionally high attenuation leads to a bone-dry finish with a lingering, spicy, and slightly tannic aftertaste that emphasizes the barrel-aged character.
Mouthfeel. Medium-light body with very high, prickly carbonation that provides a refreshing, effervescent scrub on the tongue. A noticeable but smooth alcohol warmth is present, complemented by a light tannic dryness from the grape skins and oak barrel.
