This Saison presents an intricate dialogue between farmhouse tradition and wild complexity. The marriage of gin barrel-fermented wild ales and spontaneously-fermented beer yields a profile defined by vibrant Montmorency cherries and sweet Lapin cherries, supported by the plush, sun-ripened depth of Robada apricots. Subtle botanical notes from the gin-soaked oak intertwine with a rustic, barnyard funk and bright lactic acidity. Despite its long conditioning, the beer maintains a lively, effervescent character typical of the style, culminating in a bone-dry finish where the earthy tannins of oak meet a lingering, tart stone fruit essence.
Appearance. Deep amber with distinct rose and orange hues (12-16 SRM). Dense, off-white to pale pink head with excellent retention and fine Belgian lace. Hazy to nearly opaque due to fruit solids and wild yeast suspension.
Aroma. High intensity. Bright lactic tartness and complex fermentation notes of leather and earthy funk. Dominant aromas of tart Montmorency cherries and jammy Robada apricots are prominent. Nuanced gin botanicals, including juniper and coriander, blend with oak-derived vanilla and a peppery yeast ester. Malt is low and grainy.
Taste. Sharp initial impression of tart stone fruit and lactic acidity. Flavors of sweet Lapin cherries and fleshy Robada apricots dominate the mid-palate. Low hop bitterness is eclipsed by fruit tartness and soft oak tannins. Complex fermentation character includes barnyard funk and a hint of gin-soaked wood. Finishes bone-dry with lingering puckering acidity and a clean, spicy aftertaste.
Mouthfeel. Medium-light body with a very high, effervescent carbonation. Light, well-integrated alcohol warmth. Noticeable but pleasant astringency from fruit skins and oak tannins; no harshness.
