Twig presents a masterclass in English spontaneous fermentation, blending three-year-old beers aged in old white Burgundy barrels. The base, built from a turbid mash of Pilsner, Wheat, and Rye malts, offers a lean, cereal-like foundation for the complex yeast character. Aromatically, the undried hops from Brook House Farm contribute nuanced layers of spice and orchard fruit, melding seamlessly with the fermentation-driven notes of wet hay and stone fruit. A moderate acidity and a touch of volatile acidity provide vibrancy, while the long barrel maturation imparts a structured dryness and a gentle oak influence, resulting in a sophisticated, rustic, and profoundly drinkable wild ale.
Appearance. Pours a hazy, pale gold to light amber (3–5 SRM). It features a fine-beaded white head with moderate retention and light lacing, typical for long-aged spontaneous beers.
Aroma. Moderate to high intensity featuring complex barnyard funk, wet hay, and earthy leather. The English hops provide subtle spicy and floral aromatics with a hint of lemon. Distinctive vinous notes from the white Burgundy barrels are present, alongside a light peppery quality from the Rye and a cracker-like Pilsner malt base.
Taste. Initial impression is bone-dry and bright. A complex interplay of spicy Rye and bready Wheat flavors supports a funk-forward profile of apricot, citrus, and rustic Brettanomyces character. Bitterness is low, allowing the moderate lactic acidity and a touch of volatile acidity to provide structure. The finish is remarkably dry, crisp, and lingering with a faint tannic oak quality.
Mouthfeel. Medium-light body with high, effervescent carbonation that provides a lively prickle on the tongue. There is a very low alcohol warmth and a clean, slightly astringent finish from the wood and aged hops.

"English hopped beer made from a blend of solely three year old brews, produced in January and April 2020. The beers were made from turbid mashes using pilsner, wheat and rye malts. The resulting wort was boiled with aged hops, before spontaneous fermentation in old white Burgundy barrels. The blend focused on building a perfect base for an addition of wonderfully complex, but relatively subtle English-grown hops. We aimed for a balance of spicy and fruity aromatics, with nothing too characterful to obscure the incoming dry-hop, underpinned by a moderate acidity with just enough volatile acid to give it some life. The blend was dry-hopped with undried "Low Carbon" hops from Brook House Farm, up the road in Herefordshire."
