This extended maturation yields a deeply complex sensory profile defined by sophisticated Brettanomyces character and structural oak. Expect a bouquet of aged leather, dusty hay, and dried stone fruits, underscored by a refined wood presence. The wild inoculation provides a layered funk that avoids aggression, instead offering nuances of horse blanket and earthy cellar notes. On the palate, it is exceptionally dry and effervescent, balancing a subtle, grainy malt backbone with a crisp, lingering finish that reflects its lengthy transit through oak barrels.

Appearance. Deep gold to light amber with a slight, natural haze from wild microbes. A fine-beaded, off-white head forms initially but recedes to a persistent collar; light lacing is present, though head retention is impacted by the extended aging process.

Aroma. High intensity and remarkably complex. Prominent Brettanomyces funk leads with notes of damp hay, old leather, and a touch of barnyard. These are layered over secondary aromas of preserved lemon, dried apricot, and a distinct vanillin and toasted oak character derived from the three-year barrel stay.

Taste. The initial impression is bone-dry and bright. A delicate, grainy malt base supports assertive flavors of funky Brett—earthy, leathery, and slightly spicy.
