This Belgian Golden Strong Ale presents a refined, wild-inflected profile. Built upon a base of Pilsner malt and spelt, it offers a delicate grainy sweetness countered by an assertive, bone-dry finish. Fermentation in an open coolship and maturation in oak casks introduce subtle wild nuances and soft tannins that mingle with a complex bouquet of pear-like esters and peppery phenols. Dry-hopped with European hops, the aroma is elevated by herbal and floral notes. Effervescent and heady, it balances its considerable strength with a surprising lightness of body, resulting in a sophisticated and multidimensional sensory experience.

Appearance. Pale gold (4-5 SRM) with a slight, natural haze from wild maturation and spelt. It features a massive, rocky white head with exceptional retention and intricate lacing.

Aroma. High intensity with a complex blend of ripe pear and lemon zest esters. Subtle herbal and spicy hop notes are complemented by a peppery phenolic character and a faint, rustic oak-derived woodiness.

Taste. Initial crispness gives way to soft, crackery malt and nutty spelt undertones. Flavors of pome fruit and herbal hops are prominent, followed by a peppery alcohol presence. It possesses a moderate bitterness that is accentuated by the dry fermentation profile, finishing clean with a lingering floral trail.

Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly sensation. A smooth, well-integrated alcohol warmth is present, enhanced by a touch of oak tannin and the creamy texture of the spelt.

The Dickens is our take on one of Jonny's favourites, the Belgian Golden Strong. An effervescent, heady, pale, dry, and lightly bitter beer that remains delicate and balanced despite its considerable strength. A clear wort was drawn from an infusion mash of pilsner malt and spelt. Large quantities of European hops and cane sugar were added during the boil. Fermentation took place in our open coolship at warm ambient summer temperatures. The young beer maturated in large oak casks with wild yeast and bacteria until the winter. Finally, the beer is dry-hopped with whole-leaf hops and bottle conditioned for three months before release.

The Dickens is the brewery’s take on a Belgian Golden Strong, a style that remains one of Jonny’s favorites. Effervescent, heady, pale, dry, and lightly bitter, it strikes a delicate balance—managing to be both refined and dangerously drinkable despite its considerable strength.

This batch was brewed in June 2024, beginning with a clear wort drawn from an infusion mash of pilsner malt and spelt. During the boil, generous amounts of European hops and cane sugar were added. Fermentation took place in the brewery’s open coolship, where warm summer temperatures encouraged a vibrant fermentation. The young beer was then matured in large oak casks with wild yeast and bacteria, developing depth and complexity over the winter months.

To complete the process, the beer was dry-hopped with whole-leaf hops and bottle conditioned for three months before release, ensuring a bright, expressive character in every pour.
