This delicate Belgian Single from Mills Brewing showcases a masterful blend of worts produced via traditional turbid mashing. Incorporating Rye, oat, and barley malts, the beer offers a complex, rustic grain foundation uplifted by the brewery's unique house culture. Seven-year-old Hallertau Hersbrucker hops provide a nuanced, seasoned noble backdrop, while a finishing dry-hop of whole-cone Polish Magnum adds vibrant spicy and floral layers. Despite its 18-month aging in stainless steel, the profile remains remarkably fresh and bright. Expect a bone-dry finish with intricate fermentation esters and a subtle phenolic snap, all carried on a remarkably light, sessionable frame.
Appearance. Pale straw to light gold (SRM 3-4). Generally clear with a slight haze from the rye and oats; features a billowy, persistent white head with fine lacing.
