Mills Brewing’s Stingo - Dark is a complex, high-gravity interpretation of a Straight Sour Beer that challenges traditional pale conventions. By incorporating extra brown and black malts, this iteration offers a robust, bready depth and increased body. The dry-hop addition of Bramling Cross hops introduces distinctive dark fruit and spice notes, which integrate seamlessly with a sharp, clean lactic acidity. Maturation in old Scotch barrels adds a layer of intrigue with a subtle whisper of peat smoke. At 9.6% ABV, the profile is defined by a bold interplay of toasted grains, sharp tartness, and barrel-driven warmth, resulting in a sophisticated and deeply layered sensory experience.

Appearance. Deep mahogany to near-black (30+ SRM). Moderate tan head with fair retention and light lacing. Opaque but with a clear, dark clarity around the edges.

Aroma. High intensity. A sharp, clean lactic sourness is dominant, complemented by a complex malt profile of toasted bread, dark chocolate, and coffee from brown and black malts. Bramling Cross hops contribute herbal spice and blackcurrant notes. A faint, peaty smoke and oak character from Scotch barrels is perceptible.

Taste. Initial impression is a bracing lactic acidity. Mid-palate reveals rich, toasted malt and slightly roasted grain flavors. Bramling Cross hop flavor provides a tart dark fruit character. Hop bitterness is undetectable, as the balance is dominated by acidity. A subtle Scotch barrel smoke emerges toward the end. The finish is dry and clean with lingering tart fruit and alcohol warmth.

Mouthfeel. Medium-full body with a notable weight from the dark malts. Moderate to high carbonation. Noticeable alcohol warmth is present but well-integrated. Low astringency and a crisp, acidic finish.
