Made in much the same way, but with extra brown and black malts to add body and intrigue, a tweak of the minerals in the water to suit, and with Bramling Cross in the dry-hop to bring a little extra fruit to proceedings. Stingo Dark is a traditional strong English ale. It was made using Maris Otter and black malts, invert sugar, and large quantities of Fuggle and Goldings hops. Open fermented with ale yeast before maturation in old Scotch barrels with our local microflora. Dry-hopped with Bramling Cross before bottle conditioning.
Ingredients: water, barley, rye, oats, hops, yeast.
