This amber-hued Saison reveals a complex sensory tapestry woven from barrel-aging and a thoughtful dry-hop blend of Hallertau Blanc, Mandarina Bavaria, and Fuggles. The initial aromatic profile bursts with white wine and gooseberry notes, transitioning into tangerine zest and a rustic, earthy undertone. Time and wild yeast have transformed the hop oils into a deep, funk-forward character reminiscent of leather and hay. On the palate, toasty amber malts provide a sturdy base for firm bitterness and peppery yeast phenols. It finishes exceptionally dry and effervescent, leaving a lingering trail of herbal spice and bright, citrus-driven acidity.
Appearance. Deep amber (12–14 SRM). Dense, ivory, rocky head with excellent retention and Belgian lace. Unfiltered, displaying a slight to moderate haze from wild yeast and dry-hopping.
Aroma. High intensity. A complex interplay of spicy pepper and earthy funk. Prominent white wine and stone fruit notes from Hallertau Blanc, followed by dried tangerine peel from Mandarina Bavaria. Fuggles contributes a woody, floral base. Noticeable wild yeast character (barnyard, hay) with low toasty malt.
Taste. Initial toasty, bready malt presence immediately overtaken by moderate-high bitterness. Flavors of gooseberry, tangerine, and dried herbs mirror the aroma. Wild yeast adds an earthy complexity and very light tartness. Very high attenuation leads to a bone-dry finish with a lingering peppery and herbal aftertaste.
Mouthfeel. Medium-light body with high, effervescent carbonation. Light, well-integrated alcohol warmth. Crisp and refreshing despite the amber malt profile, with no astringency.

Saison Hallertau is a bitter, amber saison with a good balance of malt, yeast and hop flavour.
This iteration was made from a blend of two barrels from two worts, both brewed in November 2022. We used single infusion mashes to produce fermentatble worts, resulting in dry finished beers. The grists contained well toasted Munich malts to give a rich malty flavour, without too much sweetness. A sizeable addition of bitter high alpha-acid Columbus hops was made at the start of the boil, followed by a blend of delicately aromatic Hallertau-grown noble hop varieties towards the end of the boil.
The spontaneous fermentations took place in old white Burgundy barrels made from French oak. The initial winter fermentation and heavy hopping favours the wild yeast over the lactic acid bacteria, while the relatively short 18 months in barrel limits the opportunity for acetic acid production. Together this leads to a more restained acidity in the final beer.
