This Straight Sour Beer offers a complex, multi-vintage profile born from a thirty-month maturation in French Burgundy and American Bourbon barrels. The inclusion of malted rye provides a subtle, spicy grain depth that underpins a sharp, lemony lactic acidity. While the aged hops contribute a structural tannin rather than bitterness, the extended time in oak introduces delicate vinous notes and a faint whiskey-cask character. It is a refined, pale, and deeply expressive blend that balances vibrant fruit esters of tart apple and peach with a bone-dry, effervescent finish, capturing the rustic elegance of patient, spontaneous maturation.
Appearance. Pale straw to light gold (3 SRM) with a slight haze. Pours with a large, dense white head that exhibits poor retention, leaving minimal lacing. Highly effervescent.
Aroma. High intensity lactic sourness dominates the nose, accompanied by moderately high fruity esters of lemon zest, green apple, and white peach. The malted rye adds a faint spicy, grainy edge over a biscuity base. Subtle oak notes of seasoned wood and dry white wine are present, with no hop aroma.
Taste. Initial impression is a sharp, clean lactic acidity. A distinctive grainy and bready malt flavor, enhanced by the spicy character of malted rye, supports the sourness. Pale fruit flavors of citrus and tart apple are prominent. No hop flavor or bitterness is detected. The finish is bone-dry and crisp, with a lingering, refreshing acidity and a hint of vinous oak.
Mouthfeel. Light body with a lively, high carbonation that produces a scrubbing effect on the palate. Crisp acidity is prominent, with a very subtle silkiness from the rye. No noticeable alcohol warmth or astringency.

"Running Beer is the first beer we designed for Mills Brewing. It is the purest distillation of how we make beer. This is blend eight. We still have no set recipe for Running Beer, but blend to a similar flavour profile each time. We produce a variety of worts and welcome the natural variation we are given by the barrels. This beer is a blend of four brews produced in November 2018, January/March 2019 and May 2020. The worts were made using malted rye and aged hops. They fermented and matured in a mixture of oak barrels previously used by French Burgundy wine and American Bourbon whiskey producers for an average of thirty months. The bottles were then left to condition for a further four months before release."
