This complex black ale offers a dark, vinous profile that bridges the gap between a robust Imperial Porter and a Belgian Dark Strong. Expect deep mahogany hues and a bouquet rich with the dark sugar depth of molasses and toasty brown malt, layered with earthy, leather-like funk from extended wild yeast maturation in oak. Summer fermentation with a fruit-forward yeast produces stone fruit esters that meld with wood-derived tannins. A generous whole-leaf dry-hopping adds a persistent herbal bitterness. Despite its strength, the Brettanomyces ensures a surprisingly dry, attenuated finish, leaving lingering notes of dried dark fruit and refined barrel character.
Appearance. Deep ebony with mahogany highlights (35-40 SRM); opaque. Pours with a moderate tan head that displays fair retention for the strength, leaving light lacing.
Aroma. High intensity and complex. Dominant notes of dark fruit, molasses, and toasted brown malt. Significant funky character featuring leather, wet hay, and earthy Brettanomyces. Subtle oak vanillin and spicy phenols are present, alongside a noticeable but integrated alcohol warmth and a floral, herbal hop lift.
Taste. A rich initial impression of toasted grain, nutty brown malt, and dark treacle. The mid-palate transitions into complex fermentation esters of plum and cherry. Firm herbal hop bitterness balances the malt depth. The wild yeast maturation provides an earthy, rustic funk that strips away residual sweetness. Finishes quite dry and slightly tart, with a lingering wood-aged character and herbal hop presence.
Mouthfeel. Medium-full body that feels lighter than its 10% ABV would suggest due to high attenuation. Moderate to high carbonation provides a lively, scrubbing texture. Significant alcohol warmth is smooth rather than hot. Low astringency from oak tannins.

A top fermented very strong black beer that sits somewhere between a Belgian Dark Strong ale and an Imperial Vatted Porter. The wort is made from barley, wheat, brown malt, and dark molasses sugar. A large quantity of European hops are added during the boil to add herbal bitter flavours. Noire is brewed in the summer and fermented with a fruit-forward ale yeast in our coolship at ambient temperatures. The fermentation is allowed to naturally rise in temperature with the warmth of the active yeast, producing rich boozy aromatics. Once this primary fermentation starts to subside, the nascent beer is racked into large oak casks with our indigenous wild yeast and bacteria to mature in the cold of winter. They slowly work away at the remaining sugars, producing a drier and more elegant drink, all the while tempering the heat of the warm fermentation and releasing all manner of new aromatic interests. Finally, the beer is dry-hopped with whole-leaf hops and bottle conditioned for several months before release, around a year from the original brew date.
